Ingredients
Apple Strudel
-
½ cup golden raisins
-
2 tablespoons rum
-
4 large apples, peeled, cored, and finely diced
-
1 tablespoon lemon juice
-
¾ cup packed brown sugar
-
¾ teaspoon ground cinnamon
-
⅛ teaspoon ground nutmeg
-
1 package (2 sheets) frozen puff pastry, thawed
-
½ cup panko breadcrumbs
-
1 egg
-
1 tablespoon milk
Cinnamon Glaze
-
1 cup powdered sugar
-
2 tablespoons milk
-
1 teaspoon ground cinnamon
-
½ teaspoon vanilla extract
Instructions
-
In a small bowl, mix the raisins and rum. Place the bowl in a sink filled with a few inches of hot water and let soak for 15–20 minutes. Drain any excess rum.
-
In a large bowl, toss the diced apples with lemon juice. Add the soaked raisins, brown sugar, cinnamon, and nutmeg. Stir until well combined.
-
Preheat your oven to 400°F (200°C). Lay out two large pieces of parchment paper.
-
Gently unfold the puff pastry sheets onto the parchment paper. Use a rolling pin to smooth out folds and creases.
-
Sprinkle ¼ cup breadcrumbs down the center of each pastry sheet. Evenly divide the apple mixture and spoon it over the breadcrumbs.
-
Using a pizza cutter, slice the sides of the pastry into strips about ½ to ¾ inch wide, aligning both sides evenly.
-
Carefully transfer the parchment paper with the pastry onto baking sheets.
-
Fold the strips over the filling, alternating left and right to create a braided pattern. Lightly moisten the edges with water to help seal.
-
Use paper towels to soak up any excess juice around the edges.
-
In a small bowl, beat the egg with milk. Brush the mixture over the top and sides of the strudel.
-
Bake for 35–40 minutes, or until golden brown.
-
In another bowl, whisk together powdered sugar, milk, cinnamon, and vanilla to make the glaze.
-
Drizzle the glaze over the fully cooled strudel before serving.
