Made with a chocolate fudge cake mix and topped with a simple glossy powdered sugar frosting, they come together quickly with just a few basic ingredients. Perfect for bake sales, family gatherings, school-inspired treats, or whenever you’re craving an easy chocolate dessert.
Ingredients
For the Brownies
- 1 box (15.25 oz) chocolate fudge cake mix
- ½ cup (1 stick) unsalted butter, melted and slightly cooled, divided
- 2 large eggs, room temperature
For the Frosting
- 2 cups powdered sugar
- 2–3 tablespoons hot water, as needed
Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with aluminum foil, leaving some overhang on the sides. Lightly grease the foil with nonstick spray or a little melted butter.
2. Make the Brownie Batter
Place the dry chocolate fudge cake mix in a large mixing bowl. Do not prepare the cake mix according to the package directions.
Add ¼ cup melted butter and the eggs. Stir with a sturdy spoon or spatula until everything is well combined. The batter will be very thick.
3. Spread the Batter
Transfer the batter to the prepared pan. Use a spoon or offset spatula to press and spread it evenly into the corners.
4. Bake
Bake for 18–22 minutes, or until the top is set and a toothpick inserted into the center comes out with moist crumbs.
Be careful not to overbake—the brownies should remain fudgy.
5. Make the Frosting
While the brownies bake, add the powdered sugar to a medium bowl. Stir in the remaining ¼ cup melted butter.
Gradually add 2–3 tablespoons hot water, one tablespoon at a time, mixing until the frosting is smooth, glossy, thick, and spreadable.
6. Frost the Brownies
As soon as the brownies come out of the oven, pour the frosting over the hot brownies. Gently spread it into an even layer across the top.
7. Cool and Slice
Let the brownies cool in the pan for 30–45 minutes, until the frosting has set.
Use the foil overhang to lift the brownies from the pan. Peel away the foil and cut into 12 squares.
Conclusion
These Lunch Lady Brownies are an easy, chocolatey treat with a soft, fudgy center and a sweet, glossy frosting. They’re simple enough for everyday baking but delicious enough to share at parties and gatherings. Serve them slightly warm or at room temperature for a nostalgic homemade dessert everyone will love!
