- 1 1/2 cups heavy whipping cream (chilled)
- 1 lb strawberries (sliced, reserve 6 for topping)
- 1 pint blueberries (about 2 cups, divided)
Instructions
1. Prepare the Sponge Cake
- Bake the sponge cake using the ingredients listed.
- Once cooled, cut the cake into 4 even layers using a serrated knife.
2. Make the Berry Syrup
- In a small bowl, combine:
- Half of the raspberries
- 1/4 cup water
- 4 Tbsp orange liqueur
- 2 Tbsp sugar
- Mash everything together with a fork to create a syrup.
- Set aside.
3. Prepare the Mascarpone Cream
- In a large bowl, mix mascarpone cheese with 2 Tbsp orange liqueur until smooth.
- In another bowl, beat together:
- Heavy cream
- 1/3 cup sugar
- Vanilla extract
until soft peaks form.
- Gently fold half of the whipped cream into mascarpone.
- Fold in the remaining cream until fully combined and smooth.
4. Assemble the Cake
- Place the first cake layer on a serving platter.
- Spread 1/4 of the raspberry syrup over the layer.
- Add 1/4 of the mascarpone cream.
- Top with sliced strawberries and blueberries.
- Repeat the process for all layers.
- Decorate the top with remaining strawberries, raspberries, and blueberries.
