Ingredients
-
3 cups whole milk
-
4 large eggs
-
3/4 cup granulated sugar
-
1 tablespoon pure vanilla extract
-
1/2 teaspoon salt
-
Ground nutmeg, for topping
-
Butter, for greasing ramekins
Instructions
Step 1: Prepare the Oven and Ramekins
Preheat your oven to 325°F (160°C). Lightly grease 6 small ramekins with butter. Place the ramekins inside a deep baking dish that will later be filled with hot water to create a water bath.
Step 2: Whisk the Custard Base
In a mixing bowl, whisk the eggs until smooth. Add the granulated sugar, salt, and vanilla extract, stirring gently until the mixture is well combined.
Tip: Whisk gently to avoid creating too many bubbles, which can cause the custard surface to become uneven during baking.
Step 3: Temper the Milk
Heat the milk in a saucepan until it is hot but not boiling. Slowly pour the hot milk into the egg mixture while whisking continuously. This process, known as tempering, prevents the eggs from scrambling.
Step 4: Prepare the Water Bath
Pour the custard mixture evenly into the prepared ramekins. Lightly sprinkle ground nutmeg over the top of each custard. Carefully pour hot water into the baking dish until it reaches about halfway up the sides of the ramekins.
Step 5: Bake the Custard
Place the baking dish in the oven and bake for 40–45 minutes. The custard is ready when the edges are set and the center still has a slight jiggle when gently shaken.
Step 6: Cool and Serve
Carefully remove the ramekins from the water bath immediately after baking to stop the cooking process. Allow them to cool at room temperature for about 20 minutes. Serve warm, or refrigerate for a chilled and firmer custard.
Conclusion
Classic vanilla baked custard proves that simple ingredients can create something truly special. Its creamy texture, gentle sweetness, and comforting aroma make it a dessert that never goes out of style. Whether enjoyed warm right out of the oven or chilled for a smooth and refreshing treat, this timeless custard is perfect for family dinners, holidays, or anytime you crave a homemade dessert.
