Introduction
Chicken pickle is a bold, spicy, and flavorful condiment that combines tender pieces of chicken with aromatic spices and tangy ingredients. Popular in many South Asian kitchens, this unique pickle blends the richness of cooked chicken with the intense flavors of chili, garlic, and vinegar or lemon juice. Unlike traditional vegetable pickles, chicken pickle has a deep savory taste that pairs beautifully with rice, flatbreads, or even simple meals. With its rich oil-based masala and long-lasting flavor, this recipe is perfect for anyone who loves spicy and tangy dishes.
Ingredients
-
500 g boneless chicken, cut into small bite-sized pieces
-
1 tablespoon ginger-garlic paste
-
1 teaspoon turmeric powder
-
1 tablespoon red chili powder (adjust to taste)
-
1 teaspoon black pepper powder
-
1 teaspoon mustard seeds
-
1 teaspoon fenugreek seeds
-
1 teaspoon cumin seeds
-
8–10 garlic cloves, chopped
-
2 tablespoons lemon juice or vinegar
-
1 teaspoon salt (or to taste)
-
1/2 cup cooking oil (preferably mustard oil or vegetable oil)
-
1 teaspoon garam masala
-
6–8 curry leaves (optional)
Instructions
Step 1: Marinate the Chicken
In a bowl, mix the chicken pieces with turmeric powder, salt, ginger-garlic paste, and a little red chili powder. Let it marinate for about 30 minutes so the flavors absorb into the chicken.
Step 2: Cook the Chicken
Heat a small amount of oil in a pan and cook the marinated chicken pieces until they are fully cooked and slightly crispy. Remove from the pan and set aside.
Step 3: Prepare the Spice Base
In the same pan, heat the remaining oil. Add mustard seeds, fenugreek seeds, and cumin seeds. Allow them to crackle and release their aroma.
Step 4: Add Aromatics
Add chopped garlic and curry leaves, and sauté for a minute until fragrant.
Step 5: Add the Spices
Reduce the heat and add red chili powder, black pepper powder, and garam masala. Stir gently to avoid burning the spices.
Step 6: Combine the Chicken
Add the cooked chicken pieces into the spice mixture and mix well so every piece is coated with the masala.
Step 7: Add the Tangy Flavor
Pour in the lemon juice or vinegar and cook for another 2–3 minutes. This helps preserve the pickle and enhances its tangy taste.
Step 8: Cool and Store
Allow the chicken pickle to cool completely. Transfer it into a clean, dry glass jar and ensure the chicken is covered with oil to help preserve it.
Conclusion
Chicken pickle is a deliciously spicy and tangy condiment that can elevate even the simplest meals. Its rich blend of spices and savory chicken makes it perfect for serving with rice, bread, or traditional dishes. When stored properly in a clean jar and refrigerated, this pickle can last for several days while its flavors continue to deepen, making it an irresistible addition to your kitchen.
