Ingredients
- 4 slices bacon, coarsely chopped
- ½ large onion, chopped
- 2 ribs celery, chopped
- 2 medium carrots, peeled and chopped
- 2 cloves garlic, minced
- ¼ teaspoon ground cayenne pepper
- ¼ cup all-purpose flour
- 4 cups low-sodium chicken broth (or vegetable broth)
- 3 medium Yukon gold potatoes, peeled and chopped
- 3 cups corn kernels (fresh or frozen)
- 1 cup heavy cream (room temperature)
- 2 teaspoons fresh thyme, chopped
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook the bacon
In a large Dutch oven over medium heat, cook the chopped bacon until browned and crispy. Remove with a slotted spoon and place on a paper towel-lined plate. Leave the bacon grease in the pot. - Sauté vegetables
Add onion, celery, and carrots to the bacon grease. Cook over medium heat until softened. Reduce heat slightly, then stir in garlic and cayenne pepper. Cook for 1 minute, stirring constantly. - Add flour and broth
Increase heat to medium. Sprinkle in the flour and cook for about 2 minutes, stirring continuously. Slowly pour in the broth while stirring to avoid lumps. - Simmer the chowder
Add potatoes, corn, and most of the cooked bacon (save some for garnish). Bring to a boil, then reduce heat and simmer until the potatoes are tender. - Finish with cream and seasoning
Remove from heat and slowly stir in the cream. Add fresh thyme. Season with salt and black pepper to taste. - Garnish and serve
Top with the reserved bacon and a sprinkle of fresh thyme before serving.
Conclusion
This creamy corn chowder is the perfect combination of comfort and flavor—rich, hearty, and deeply satisfying. Whether you’re serving it as a main dish or alongside crusty bread, it’s sure to become a favorite in your kitchen. The blend of fresh ingredients and smoky bacon creates a timeless recipe you’ll want to make again and again.
