Ingredients
For the Filling
- 1 lb ground beef
- 2 tbsp olive oil (divided)

- ½ cup water (to mix with seasoning)

- 8 corn tortillas
- 1 large (15 oz) can red enchilada sauce

Instructions
1. Brown the Beef
Heat 1 tablespoon olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles. Drain excess fat and set aside.
2. Sauté the Vegetables
In the same skillet, add the remaining olive oil. Sauté the diced peppers, onion, and garlic for about 4–5 minutes until softened. Transfer to a bowl, leaving minimal oil behind.
3. Season & Combine
Return the skillet to low heat and add the cooked beef back in. Stir in the taco seasoning mixed with water. Fold in the sautéed vegetable mixture and simmer until the mixture thickens and is well coated.
4. Prepare the Tortillas
Warm a small skillet over low heat. Lightly brush one side of each tortilla with oil and warm briefly on both sides until pliable. Stack tortillas with the oiled side down to prevent sticking.
5. Assemble the Enchiladas
Preheat oven to 350°F (175°C). Lightly brush a 9×12-inch baking dish with oil and spread a thin layer of enchilada sauce on the bottom.
For each tortilla:
- Add about 3 tablespoons of beef filling
- Sprinkle diced onion and some cheese
- Roll tightly and place seam-side down in the dish
6. Top & Bake
Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining shredded cheese on top.
Bake uncovered for about 30 minutes, until the cheese is melted, bubbly, and lightly golden.
