Some desserts feel like a quiet celebration—elegant enough for special occasions, yet comforting enough for everyday moments. This Flourless Almond Cake with Raspberry Sauce is one of those rare treats. With its rich almond flavor, soft and slightly custard-like texture, and a bright, tangy raspberry topping, it creates a perfect balance of indulgence and freshness. Naturally gluten-free and simple to prepare, this cake is as versatile as it is unforgettable.

 Ingredients

For the Cake:

  • 2 cups (200g) almond meal / almond flour
  • 1 cup (200g) granulated sugar
  • 4 large eggs, room temperature
  • 1/2 cup (115g) unsalted butter, melted
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Zest of 1 lemon (optional)

For the Raspberry Sauce:

  • 2 cups (250g) fresh or frozen raspberries
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 1–2 tablespoons water (if needed)

 Instructions

1. Prepare the Oven & Pan

Preheat your oven to 350°F (175°C).
Grease an 8-inch (20 cm) round cake pan and line the bottom with parchment paper.

2. Make the Cake Batter

In a large bowl, beat the eggs and sugar until pale and slightly thick.
Add the melted butter, vanilla extract, and lemon zest, then mix until well combined.
Gently fold in the almond flour, baking powder, and salt until the batter is smooth.

3. Bake the Cake

Pour the batter into the prepared pan and smooth the top.
Bake for 40–45 minutes, or until golden and a toothpick inserted comes out mostly clean (a few moist crumbs are fine).
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

4. Prepare the Raspberry Sauce

In a saucepan, combine raspberries, sugar, and lemon juice.
Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens (about 8–10 minutes).
Add a little water if needed to reach your desired consistency.
(Optional) Strain the sauce for a smooth, seedless finish.

5. Serve

Slice the cake and drizzle generously with warm or cooled raspberry sauce before serving.

 Conclusion

This Flourless Almond Cake with Raspberry Sauce is a timeless dessert that brings together richness and brightness in every bite. Whether served at a gathering or enjoyed quietly with a cup of tea, it offers a perfect blend of elegance and comfort. Simple to make yet impressive to present, it’s a recipe you’ll find yourself returning to again and again.
